When you’re making a salad, soup, stir-fry, or casserole, cutting your veggies into big chunks not only takes less time – it can help you drop pounds. Chomping down on big pieces of vegetables requires more chewing and more effort to eat. That’ll slow down how quickly you eat and help you feel more satisfied. Put those two together and it translates to eating less food overall.

If you have a significant amount of weight to lose, do this one thing: Make at least one meal per day at home. Research at the Bloomberg School of Public Health at Johns Hopkins University found that people who cooked one meal a day at home, ate an average of 570 FEWER calories a day – compared to when they ate out. Follow that one move, and you could lose up to 60 pounds in the next year, without making any other changes.

Outdoor grilling adds a lot of flavor without a lot of calories. But how sanitary is it to throw fresh meat on a grate you haven’t used since last summer? Or on a public grill at a park or campground? The good news is, the heat quickly kills any microbes that sprouted on the grates since its last use. That’s from microbiologist Dr. Steven Porcelli, from Albert Einstein College of Medicine. He says the flames essentially sterilize the cooking surface before food comes into contact with it. But still, if the grates are covered with charred residue, it can affect the taste of your meal. So scrape and rinse the grates before cooking. Or cook your food on top of aluminum foil.

You know those little taste-test bites you take while cooking? They don’t do as much damage to your diet as you may think! Dr. Brian Wansink is a nutritional science expert. He says people who nibble while preparing food – then sit down to a full meal – eat 57% FEWER calories than if they wait to eat until the cooking is done. Dr. Wansink says having a small snack actually shuts down hunger pangs and food cravings… So when you do sit down to eat, you’re not ravenous and end up overeating. So, go ahead and sample your cooking!

If it’s over 6 months old, it isn’t giving you the same nutritional punch. According to the Journal of Food Science, the disease-fighting antioxidants in olive oil are 40% less effective 6 months after the bottle is opened. And that’s true even if you’re storing it properly in a cool, dark place. So only buy small bottles of olive oil. That way they won’t sit around, and you’ll get a full dose of antioxidants.

You know those copper pots hanging above the island in your kitchen? Stop using them for decoration – and cook with them – to reduce food poisoning. New research from the University of Arizona found that when copper is heated, the oxidation process kills food poisoning bacteria – like E. coli and salmonella.

back-burner-cooking
Do as much stovetop cooking as possible on your back burners.

Why? Because most exhaust fans extend over the back half of the stovetop, but a lot of them completely miss the front ones, and the hot air from the pans rises in a column directly above each burner. So, if you use the back burners, your exhaust fan will remove twice as much smoke, soot and pollutants.
