Serve yourself some potato salad, or maybe two scoops of grandma’s famous pasta salad! Researchers at the University of Toronto found potatoes and pasta that are cooked and then popped into the fridge to cool down, develop so-called “resistant” starch. And when you eat resistant starch, it sends a message to your brain to “chill out,” and be less sensitive to the triggers that stress you out. And as we’ve said before, when a carbohydrate is turned into resistant starch, it acts more like fiber in the body – and helps us burn fat.

That’s from Lisa Ackerley, a leading expert on food safety. And a grill’s heat won’t necessarily kill illness-causing microbes, which can be transferred to your burgers and hotdogs.

So why are outdoor grills so filthy? Because living in the backyard exposes them to decaying plant matter, food, and bird droppings. And that makes the grill a magnet for harmful bacteria like E.coli, salmonella, and listeria. 

Bottom line: To protect the guests at your next barbecue, give your grill a good scrub before you fire it up.

And registered dietician Melissa Joy Dobbs says, when the weather dips, we crave heartier meals – which you can make with fewer calories on the grill. Because you can get a lot of flavor from meat and vegetables without adding a lot of calories.

Check the grill first to make sure there are no metal bristles from a wire grill brush stuck in the crevices. Otherwise, the wires could end up in whatever you cook. In fact, about 150 people end up in the ER every year after swallowing metal fragments at a barbecue – which can perforate the intestine, and require life-saving surgery. So, make sure you rinse the grill thoroughly. Or avoid the problem altogether, by using a brush made of plastic.

Outdoor grilling adds a lot of flavor without a lot of calories. But how sanitary is it to throw fresh meat on a grate you haven’t used since last summer? Or on a public grill at a park or campground? The good news is, the heat quickly kills any microbes that sprouted on the grates since its last use. That’s from microbiologist Dr. Steven Porcelli, from Albert Einstein College of Medicine. He says the flames essentially sterilize the cooking surface before food comes into contact with it. But still, if the grates are covered with charred residue, it can affect the taste of your meal. So scrape and rinse the grates before cooking. Or cook your food on top of aluminum foil.
