Watermelon, carrots, squash and spinach. According to the European Journal of Nutrition, people who eat the most watermelon, carrots, squash and spinach have DNA that ages more slowly. As a result, those people have a lower risk of age-related problems, like Alzheimer’s, cancer and cardiovascular disease. The power is in the antioxidants that control the plant’s pigment! They’re called carotenoids, and they give fruits and vegetables their bright colors – and help protect against disease by fortifying cells from damage. So load up on watermelon, carrots, squash and spinach.

If you’re feeling sluggish and dehydrated, try these top “recovery” foods to help get your energy back. They come from registered dietician Deborah Tagliareni:

First: Eat watermelon. It’s got “water” right in the name. Plus, it’s full of lycopene, an antioxidant also found in tomatoes. But watermelon has 4 times as much lycopene as tomatoes. So it’s a powerhouse when it comes to preventing and repairing free-radical damage.

Also, eat some cucumbers. Next, to lettuce, they have the highest water content of ANY vegetables! Plus, cucumbers have key B vitamins that support your metabolism by converting carbohydrates into energy.

To get the biggest nutritional boost from watermelon, honeydew, cantaloupe and more, store them at room temperature. That’s because the antioxidant levels in melons continue to rise after they’re picked… But refrigerating them can stop that process cold, and cut the number of antioxidants in the fruit in half.
A USDA study found that watermelons kept at room temperature developed nearly double the levels of beta-carotene as refrigerated melons, which promote healthy skin and eyes. But once a melon’s been cut, keep it chilled to prevent bacterial growth.

Not only is it sweet and delicious – one slice of watermelon has the hydration equivalent of 10 ounces of water, that’s over a glass! And a slice of watermelon only has 85 calories! It’s the lowest carb fruit you can eat! How can you tell if a watermelon is ripe? Roll it around and check for the ‘couche’ — that’s the spot the melon rested on the ground while growing. If it’s white or yellow, it’s ripe. There should also be very little contrast between the stripes.
Also, you want to store watermelons at room temperature to bring out the most nutrients. One cup of watermelon has more lycopene and beta-carotene than a medium-sized tomato. Lastly, ALWAYS WASH the rind before slicing. It can be harboring bacteria which gets transferred into the fruit when you cut it.
