According to the University of Michigan, eating a medium-sized potato every day, russet or sweet, with the skin, could cut your incidence of migraines by 25%. It’s down to the potassium in potatoes, which relaxes blood vessels. So you’re less likely to get the constriction of blood vessels in the brain that cause migraine pain. Not a fan of potatoes? Other foods high in potassium are: Kidney beans, lentils, spinach, clams, carrot juice, prunes and dried apricots.

If you’d like to make your mashed potatoes healthier, cook them whole! Research from the Agricultural Research Service in Madison, Wisconsin found that slicing potatoes before boiling them cuts their mineral content in half. Including potassium, which helps conduct impulses between nerves, muscles and brain, helps regulate blood pressure, and is vital for proper heart function.

Don’t cut your vegetables before you cook them.

Scientists found that potatoes retain 50% more potassium when cooked whole, than when they’re chopped up. And carrots hang onto 25% more cancer-fighting compounds when cooked whole. And as a bonus, your food will taste better! According to researchers at Newcastle University in the UK, cutting vegetables into pieces before cooking them means that compounds such as sugars and acids leach into the water – which causes them to lose flavor.

Eat more white produce. Things like garlic, leeks, onions, apples, pears, bananas, cauliflower, and cucumbers. Research found that the people who eat the most white fruits and vegetables – or those with white flesh – have a 52% lower risk of stroke.

Why white-fleshed fruits and veggies are beneficial isn’t known. One theory is that those foods are high in dietary fiber and antioxidants, which lower blood pressure or cholesterol, and can protect brain blood vessels or prevent clots from forming. But before you OD on the white flesh of a POTATO – they’re not on the list, because they’re considered a starch, not a vegetable.
