She says, even though they’re made from the same basic ingredients – flour and sugar – the biscotti has half the calories and a‑third of the fat. The big difference is butter – or a lack of it. Traditionally, biscotti is made without any butter or oil. That’s why they’re so hard and crispy. And if the biscotti has almonds, you just increased the antioxidants and protein.
